Chicken Recipe

I just tried out a new chicken recipe that is fabulous and very healthy!

Honey Baked Chicken

2 lbs chicken breasts--thinly sliced
4 tbs. butter or sunflower oil
1/4 cup Dijon mustard
1/2 - 1tsp curry powder
1/2 cup honey

Melt the butter. Place the butter in a Pyrex casserole dish. Add the remaining ingredients to the butter and then place the chicken pieces in the sauce mixture, rolling around until well coated. Arrange the chicken in a single layer in the same dish and bake at 375 degrees for 25-30 minutes. Baste the chicken with the sauce every 10 minutes.

This turned out very moist and everyone loved it. It's great served over rice.
